Vegan Cauliflower Alfredo Pasta


Description

This cauliflower alfredo sauce is velvety smooth, creamy, and extremely nutritious!  You’ll never know cauliflower is the main ingredient because the nutritional yeast, sauteed onion, and garlic combo give off some seriously cheesy vibes.  The entire family is sure to dig right in!

Instructions

  1. Heat coconut oil in skillet over low heat
  2. Once oil is melted, add in chopped onions and cook until translucent
  3. Next, add in the garlic to the skillet and cook for 1-2 minutes
  4. Pour broth into skillet, add chopped cauliflower, and steam with the lid on for ~5 mins
  5. While cauliflower is steaming, heat up a pot of boiling water and cook the chickpea pasta
  6. Add the cauliflower mixture, nutritional yeast, and sea salt to a high powered blender and process until creamy (this should take about a minute)
  7. Drain pasta and once ready to serve transfer to a large mixing bowl and pour the sauce over top, mixing well to coat the pasta
