Chickpea Pasta Salad

Fresh and simple mediterranean chickpea pasta salad! Outfitted with red tomatoes, peppers, and mozzarella pieces. This pasta salad makes the perfect lunch!


  • 1 box chickpea pasta
  • 1/2 cup cherry tomatoes, sliced
  • 1/4 cup diced red pepper
  • 1/4 cup diced green pepper
  • 3 Tbsp red onion, diced
  • 1/4 cup vegan mozzarella
  • 1/2 cup olive oil
  • 1 Tbsp lemon juice
  • 1 Tbsp apple cider vinegar
  • 1/4 tsp garlic powder
  • 1 tsp fresh parsley
  • 1 tsp fresh oregano
  • 1/2 tsp sea salt


  1. Cook the pasta according to directions. Drain and set aside.
  2. Prepare the dressing by whisking together the olive oil, apple cider vinegar, garlic powder, parsley, oregano, and sea salt in a small bowl.
  3. In a large bowl, add the pasta, diced tomatoes, red peppers, green peppers, red onion, and mozzarella. Toss to mix. Drizzle the dressing over the pasta and toss to disperse.
  4. Spoon the pasta into bowls and serve!
