Description
Fresh and simple mediterranean chickpea pasta salad! Outfitted with red tomatoes, peppers, and mozzarella pieces. This pasta salad makes the perfect lunch!
Ingredients

- 1 box chickpea pasta
- 1/2 cup cherry tomatoes, sliced
- 1/4 cup diced red pepper
- 1/4 cup diced green pepper
- 3 Tbsp red onion, diced
- 1/4 cup vegan mozzarella
- 1/2 cup olive oil
- 1 Tbsp lemon juice
- 1 Tbsp apple cider vinegar
- 1/4 tsp garlic powder
- 1 tsp fresh parsley
- 1 tsp fresh oregano
- 1/2 tsp sea salt
Instructions
- Cook the pasta according to directions. Drain and set aside.
- Prepare the dressing by whisking together the olive oil, apple cider vinegar, garlic powder, parsley, oregano, and sea salt in a small bowl.
- In a large bowl, add the pasta, diced tomatoes, red peppers, green peppers, red onion, and mozzarella. Toss to mix. Drizzle the dressing over the pasta and toss to disperse.
- Spoon the pasta into bowls and serve!
