Mind-Blowing Paleo Chocolate Chip Banana Bread

  • 3 overripe bananas
  • 2 eggs
  • 1/4 cup almond butter (any nut butter will work)
  • 1 tsp vanilla
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • dash of sea salt
  • 1/2 cup chocolate chips and/or chunks


  1. Preheat oven to 350 F.  In the bowl of a stand mixer or in a separate bowl with a hand mixer, beat the bananas, eggs, almond butter, and vanilla together until the bananas are well mashed
  2. Fold in the coconut flour, baking powder, baking soda, and sea salt and mix until no flour lumps remain.  Add the chocolate chips and mix with a spatula
  3. Pour batter into a loaf pan lined with parchment paper or greased with oil.  Bake for 30 - 35 minutes until a toothpick can be inserted in the middle and it comes out clean
  4. Store in an airtight container on the counter for up to 3 days or in the fridge for up to 5 days
