I’ve never been a slice and bake cookie kinda gal. I blame my desire for a challenge and willingness to go the extra mile for a homemade cookie. I think we can all agree that cookies made from scratch typically taste better. Maybe it’s the tender, love, and care that goes into each and every one?

The Best Boxed Cookies
These cookies start off with a box of cookie mix and are probably as close to slice-and-bake as I’ll go in the cookie department. But it’s not just any cookie mix, Simple Mills Chocolate Chip Cookie Mix. I’m a huge Simple Mills fan girl if you didn’t already know. They have a boat load of paleo-friendly, gluten-free mixes like muffins, breads, pancakes, and, yes, cookies. I can attest to the fact that every single one is mind-blowingly scrumptious and super easy to make.
What I like most about using these mixes is that you can make it your own and get a little creative in the kitchen. Something else you may notice about me is that I rarely follow the directions laid out on the back of the box/bag. Again, I have to blame my desire for a challenge but my stubbornness may come into play here too. But hey, when the end product looks like one of these warm, chocolatey masterpieces, I’ll take the stubborn cookie any day.

If you’re not like me and actually want to follow the recipe on the back of the box, go for it! You’ll still make a fabulous cookie. If you want to mix things up a bit, try adding come nut butter in place of the butter or oil. It adds a little more creaminess and a wonderful nut butter taste. Feeling extra like me? Bake them on a lollipop stick and drizzle some melted chocolate on top. Trust me, people will never know it all started with a boxed mix ????.

Description
Crispy chocolate chip cookies that are mess-free and easy to make using Simple Mills Cookie Mix. They have the look & taste of a homemade cookie so nobody will know they all started with a box (your secret is safe with me;) ). They are paleo-friendly, plant-based, gluten-free, dairy-free, and sure to be the hit of the party!
Ingredients
- 1 box Simple Mills Chocolate Chip Cookie Mix
- 3 Tbsp almond milk (or nut milk of choice)
- 2 tsp vanilla
- ¼ cup almond butter (or nut butter of choice)
- Lollipop sticks (optional)
- ¼ cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350 F
- In a bowl, mix Simple Mills Cookie Mix, almond milk, vanilla, and almond butter until fully incorporated
- Roll heading tablespoons of dough into balls. Place lollipop stick in the middle of the ball if desired. Press down to flatten out the ball into a hockey puck shape and place on greased baking sheet
- Bake cookies for 10-12 minutes until the edges turn a golden brown
- While cookies are cooling down, melt dark chocolate chips in microwave safe dish or over stove and drizzle on top if desired
