A delicious and nutritious broccoli salad packed with fresh, crunchy vegetables, sweet dates, and creamy avocado-style mayo. This salad makes the perfect side dish, nutritious snack, or meal with some added protein! It’s the broccoli salad you’ve been waiting for.
Ingredients

- 1 head broccoli (~5 cups broccoli florets)
- 2/3 cup red onion
- 1 1/2 cups shredded carrots
- 1/2 cup slivered almonds
- 1/3 cup dates (about 5 small dates)
- 2/3 cup avocado oil mayo*
- dash of sea salt
- dash of black pepper
Instructions
- Cut the florets off the broccoli head into bite sized pieces add to a large mixing bowl
- Dice red onion and add to the mixing bowl along with the shredded carrots, slivered almonds, and chopped dates
- Mix the vegetables in the bowl and then add the mayo, salt, and pepper and continue to mix until ingredients area all well combined
- Store in an airtight container in the fridge for up to 5 days! (best enjoyed cold)
Notes
*Note : This mayo can be found at most local grocery stores. However, plain greek yogurt or a light mayo are great alternatives.
