Zoodles were a major hit a few years ago. They were the hottest things on the street (I may be exaggerating a bit), low carb, fun to make, and a great alternative when you were craving pasta. However, they quickly spiraled (pun intended ????) down a mushy and watery hill. Nobody wants mushy make believe pasta.

Well folks, we are bringing them back! Here's how to make sure our zoodles are thick and crispy ever time.
How to Properly Make Zoodles
1.) Don’t over cook them. They need 1 minute MAYBE 2 in a skillet to warm them up and they are good.to.go! 2.) Be sure to strain any excess water that is released when warming them up. Use a colander or pay dry with a towel. 3.) Finally, it’s all about the sauce. Top off your zoodles with a rich, tasty sauce and bam you’ve got yourself some delicious, flavorful, non-soggy zoodles.

Moreover, everyone needs a quick, weeknight meal that won’t break the bank and keep you feeling your absolute best. This Easy Chicken Zoodle Marinara dish meets both of those needs. It takes 25 minutes to whip up and is packed with veggies and lean protein. Can you say #WININING?!
The key to these zoodles it to remember we are warming them up not cooking them to mush (see above for how to make those crispy zoodles you’ve been dreaming about). For the sauce, I use my all time favorite marinara, Rao’s Homemade. I love it because the ingredients are simple and all natural and I can easily find a jar at my local grocery store. Love a different kind? Great! I’m not here to tell ya what marinara sauce to choose, you do you girlfriend! Finally, we are topping it all off with a juicy, tender chicken breast flavored with simple spices you probably already have in your pantry.

Easy Chicken Zoodle Marinara

Description
This Chicken Zoodle Marinara is quick and easy to whip up and bursting with flavor. Crispy chicken on top of a bed of zoodles bathing in a delicious marinara sauce, what's not to love? It's a hearty, nutritious meal the whole family will enjoy!
Ingredients
- 1 ½ tsp olive oil (divided into 1 tsp and ½ tsp)
- ¼ tsp garlic powder
- ¼ tsp paprika
- ¼ tsp black pepper
- 2 chicken breasts
- 2 zucchini, spiralized (I use this fun tool to quickly get the job done)
- 1 cup marinara sauce (I love Rao’s Marinara)
- 1 Tbsp nutritional yeast (optional)
Instructions
- Heat 1 teaspoon olive oil in skillet over medium heat
- Sprinkle garlic powder, black pepper, and paprika over chicken breasts and place in skillet
- Cook chicken for 4-5 minutes on each side, making sure the center is thoroughly cooked
- When chicken is almost done, heat ½ teaspoon olive oil in separate skillet over medium heat and add spiralized zucchini
- Cook zucchini for 1-2 minutes, stirring occasionally (Tip - make sure not to over cook the zucchini or it will soften and release all of its water. You just want to warm it up in the skillet)
- Remove zoodles from heat and strain any excess water or pat dry with a paper towel
- In a pot, heat marinara sauce over low heat until warm (approx. 1 ½ minutes), stirring continuously
- Place zucchini noodles on plates, spoon half the marina sauce on top of each plate of zoodles, and top with chicken breast (sprinkle with nutritional yeast if desired)
