This pulled buffalo chicken is incredibly delicious, easy to whip up, and perfect to have in the fridge during the week and the ultimate tailgate addition! There are only 2 simple ingredients in this buffalo sauce and it it creamy and thick and kinda makes you want to drizzle it on everything.
SO buffalo chicken is quite simple to make and actually pretty nutritious when you don’t add all the cheese, mayo, and whole milk jazz to it (that’s what does the damage). This recipe scales it back a notch and uses real, healthy ingredients and you still achieve that creamy texture that is oh so tasty!
Funny story - I made this chicken on a Sunday so that we’d have it for lunches and dinners for the week. Monday night rolls around and I pull out some turkey meatballs for Stephen and make him a mighty fine looking chickpea pasta dish. I then start to heat up this here buffalo chicken to throw on a salad and Stephen stops in his tracks and demands to know why he doesn’t get buffalo chicken…I have to admit I didn’t think that one through. I wanted a salad and knew he’d want something more substantial so I went with chickpea pasta and turkey meatballs. It was as though I had killed his pet goldfish. He took it so personally. Happy to report though that he did eventually have a plate of buffalo chicken the next day and the world in fact did not end.
Story over…now on to this master piece.
What makes a buffalo sauce so special? I think it’s the combination of creaminess and a little kick from hot sauce. That’s that’s exactly what we have here folks! One of the key ingredients is coconut cream which is what adds that super special creamy thick texture we all know and love.
I cooked my chicken breast in an instant pot (currently obsessed with it - you can cook chicken in 6 minutes!). However, for this recipe you can cook your chicken breast however you’d like, grilled, baked, sauteed, etc.
Creamy Buffalo Chicken
For the Chicken
2 chicken breasts (a little over a pound in total)
1 cup bone broth
1/2 tsp garlic powder
1 tsp cayenne pepper
1 tsp paprika
dash of sea salt
For the Buffalo Sauce
1/4 cup green onions (chopped)
Primal Kitchen Ranch Dressing (enough to drizzle)
(If not using an Instant Pot, you can skip to step 2 with your cooked chicken)
In an Instant Pot, add chicken breasts, bone broth, and spices. Set program to Pressure Cook on normal for 6 minutes. Then let the Instant Pot naturally release for 10 minutes.
Pull cooked chicken breast and place in large mixing bowl
Sprinkle with green onions a drizzle of Ranch Dressing and enjoy!
