This pulled buffalo chicken is incredibly delicious, easy to whip up. It makes the perfect meal to have on hand and a prime tailgate dish!

Buffalo chicken is quite simple to make and pretty nutritious when you don’t add all the cheese, mayo, and whole milk jazz to it (that’s what does the damage). This recipe scales it back a notch and uses real, healthy ingredients. You can still achieve that creamy texture that is oh so tasty too!

I made this chicken on a Sunday so that we’d have it for lunches and dinners for the week. Monday night rolls around and I pull out some turkey meatballs for Stephen to make him spaghetti. Then I start to heat up this buffalo chicken to throw on a salad for myself. Stephen stops in his tracks and demands to know why he doesn’t get buffalo chicken. I have to admit I didn’t think that one through. I wanted a salad and knew he’d want something more substantial so I went with chickpea pasta and turkey meatballs. It was as though I had killed his pet goldfish. He took it so personally. Happy to report that he eventually enjoyed a plate of buffalo chicken and the world in fact did not end.
Story over…now on to this master piece.

What makes a buffalo sauce so special? I think it’s the combination of creaminess and a little kick from hot sauce. That’s exactly what we have here folks! One of the key ingredients is coconut cream which adds that special creamy thick texture we all know and love.
I cooked my chicken breast in an instant pot (currently obsessed with it - you can cook chicken in 6 minutes!). However, for this recipe you can cook your chicken breast however you’d like, grilled, baked, sauteed, etc.

With this buffalo chicken recipe, you can make the chicken ahead of time, and have it for multiple meals. Maybe on a sandwich for dinner, on a salad for lunch, in a sweet potato (like this), or just on a plate with some yummy sides!

Description
Healthy creamy buffalo chicken made with all natural ingredients and is paleo and Whole30 approved. This buffalo chicken is the prefect easy weeknight dinner the entire family with love! You can enjoy it in a sandwich, on a salad, in a sweet potato, or on it ‘s own with some side dishes!
Ingredients
For the Chicken
- 2 chicken breasts (a little over a pound in total)
- 1 cup bone broth
- ½ tsp garlic powder
- 1 tsp cayenne pepper
- 1 tsp paprika
- dash of sea salt
For the Buffalo Sauce
- 1 cup Franks hot sauce
- ½ cup coconut cream
To Top
- ¼ cup green onions (chopped)
- Primal Kitchen Ranch Dressing (enough to drizzle)
Instructions
- In an Instant Pot*, add chicken breasts, bone broth, and spices. Set program to Pressure Cook on normal for 6 minutes. Then let the Instant Pot naturally release for 10 minutes.
- Pull cooked chicken breast and place in large mixing bowl
- Add the hot sauce and the coconut cream to the chicken and mix so that the chicken is thoroughly coated
- Sprinkle with green onions a drizzle of Ranch Dressing and enjoy!
