Healthy Sweet Potato Waffles


Description

These Sweet Potato Waffles are deliciously tasty and nutrient packed.  Make them on a lazy weekend morning or store them in the freezer for a waffle any day of the week!


Ingredients

Scale

For the Waffle

  • 1 cup sweet potato (mashed, approx. 1 potato)
  • 2 eggs
  • 1 cup oat flour (use gluten-free if desired)
  • 1 tsp baking soda
  • 1/4 tsp cinnamon
  • Dash of sea salt
  • Oil of choice to grease waffle iron

Toppings (optional)

  • Greek Yogurt
  • Berries (blueberries, strawberries, backberries, etc.)
  • Nuts (pecans, almonds, walnuts, etc.)
  • Maple syrup or honey

Instructions

  1. Heat waffle iron on medium heat
  2. In a food processor, high speed blender, or with a hand mixer, mix the mashed sweet potato and eggs until creamy
  3. Add oat flour, baking soda, cinnamon, and sea salt and continue to mix until full incorporated
  4. Grease waffle iron with oil of choice (I use olive oil spray) and pour 1/3 of the batter, careful not to fill the iron to the edges or it will overflow when you close the lid
  5. Cook waffle for 3-4 minutes in the waffle iron
  6. Serve while hot or let cool and freeze for later
