Ingredients

Scale

For the Cookie

  • 1/4 cup coconut oil (melted and cooled)
  • 1/3 cup coconut sugar
  • 1 tsp vanilla
  • 1 Tbsp ground flax meal + 2 Tbs water (sub egg if not vegan)
  • 1/4 cup lemon juice (from large lemon)
  • 2 cup almond flour
  • 1/4 tsp baking soda
  • 2 Tbsp lemon zest
  • 1 Tbsp poppy seeds
  • dash of sea salt

For the Glaze

Instructions

  1. Preheat to 350 F
  2. In a large bowl, mix the coconut oil, coconut sugar, vanilla, and lemon juice until well mixed.  Stir in the flax egg and set aside
  3. In a separate bowl, whisk together almond flour, baking soda, lemon zest, poppy seeds, and sea salt
  4. Fold in the flour mixture into the bowl with the coconut oil until flour is thoroughly mixed in
  5. Scoop dough into golf-ball sized balls of dough onto a greased sheet.  Press down on the top of the ball of dough to make a disk-like shape
  6. Bake for 9-11 minutes until golden
  7. Once cooled, melt coconut butter either by placing glass jar in a pot and heating on low heat or microwaving the coconut butter in a bowl with a touch of coconut oil and drizzle over cookies
  8. Enjoy immediately or store in an air-tight container for up to 1 week
