Salmon and Sweet Potato Mac & “Cheese” (dairy-free, gluten-free)


1/2 cup cashews (soaked)

1 mased medium sweet potato (about 1 cup)

1/4 cup nutritional yeast

1/2 cup cashew milk

`3 cloves garlic

1 box chickpea pasta

4 fillets of wild salmon

paprika and garlic powder (optional)

My very first AIM screen name was MacAndCheeser1001. When a middle schooler makes their screen name after something, you know it’s serious. My love for Kraft Macaroni and Cheese was undoubtedly one of my better qualities as a kid. If you made me macaroni, I was a happy camper - simple as that.

Can we talk about the packet of ‘cheese’ too for a second. I say “cheese” because I never really knew what it was. Dehydrated cheese? How did it melt into this fantastic cheese sauce? To be honest I probably never thought twice about it. I just poured it over the hot, steamy noodles and watched in awe as it quickly dissolved. It’s the little things. In order to entertain a kid like that nowadays you probably need something more like a mac and cheese hologram and a drone shooting cheese sauce. I digress…

Fast forward a couple years and MacAndCheeser1001 is now all into health and wellness and that means her Kraft Macaroni and Cheese consumption has decreased tremendously. Although the blue box no longer interests me, cheese and pasta definitely still do (don’t they interest everyone?). Enter, this dairy-free Sweet Potato “cheese” sauce and pasta made out of chickpeas which is fulfilling all of my childhood dreams!

Healthy Salmon with Sweet Potato Mac & “Cheese”

Salmon and Sweet Potato Mac & “Cheese” Directions

Yields 4 servings

For the “cheese” sauce

  1. Blend cashews, mashed sweet potato, nutritional yeast, nut milk, and garlic in a high power blender

    *set aside while you make pasta and salmon

For the pasta

  1. Bring pot of water to boil

  2. Add entire box of chickpea pasta and cook for ~5 mins

    *while pasta is cooking, start cooking salmon

  3. Strain and transfer to mixing bowl

  4. Pour “cheese” sauce over hot pasta and mix until coated

For the salmon

  1. Heat some coconut oil in skillet

  2. Sprinkle paprika and garlic in top of salmon fillets and lay face DOWN on skillet

  3. Cook for ~2 min before flipping salmon over

  4. Cook for another ~3 mins and sprinkle with coconut aminos (optional) when the salmon is almost cooked to your desire

  5. Place on top of a big bowl of mac & “cheese”!!
