Summer Strawberry Goat Cheese Salad with Healthy Poppy Seed Dressing

This summer-filled salad is loaded with strawberries, avocados, and goat cheese, topped with tender chicken, and tossed in a delicious homemade healthy poppy seed dressing. It’s easy to make and great for a party! Your summer just isn’t complete without a strawberry goat cheese salad.



For the Dressing

  • 2/3 cup avocado oil
  • 1/3 cup lemon juice
  • 1 Tbsp poppy seed
  • 1 Tbsp apple cider vinegar
  • 2 Tbsp honey
  • 1/2 Tbsp brown mustard
  • 1/4 tsp salt
  • 1/4 tsp pepper

For the Salad

  • 1 large chicken breast
  • 1 Tbsp olive oil
  • 1 tsp Italian seasonings
  • 3 - 4 cups spring mix
  • 1 cup fresh strawberries, chopped
  • 1 avocado, sliced
  • 1/4 cup red onion, chopped
  • 1/3 cup goat cheese crumbles


For the Dressing

  1. Add all dressing ingredients to a mason jar.  Screw top on tight and shake generously until the honey is evenly distributed in the dressing.  Set aside to prepare the salad

For the Salad

  1. Heat the olive oil in a skillet over medium-low heat.  Sprinkle Italian seasonings on chicken and place in skillet.  Cook until thoroughly cooked, about 5 minutes on each side.  Set aside
  2. In a large bowl, add the spring mix.  Sprinkle the strawberries, avocado slices, red onion, and goat cheese crumbles over top.  Cut chicken into strips and add to salad bowl.
  3. Drizzle the lemon poppy seed dressing over top of salad.  Toss together and serve
