Sweet Potato Chocolate Chunk Cookies

These sweet potato cookies are soft and chewy and bursting with big chocolate chunks. Each bite is like taking a trip to heaven. Made with sweet potatoes (duhh), almond flour, and sweetened with coconut nectar, it’s an all natural cookie that is absolutely exquisite!

Asking someone how they like their cookie is like asking someone how they take their coffee - you’ll always get a different answer. There is crispy, chewy, crunchy, gooey, buttery, nutty, chocolaty, crumbly, and my personal fav….served with a glass of ice cold milk (preferably almond milk 😋).

If I’ve learned anything in my short time on this Earth, it is that it is very hard to please everyone. However, I think I’ve cracked the code - these GOOEY, CHOCOLATY, and rather HEALTHY cookies are sure to please the biggest cookie snob out there. The combination of the soft cookie + the hot melted dark chocolate will drive ya wild!! Enjoy my cookie-loving friends!

Sweet Potato Chocolate Chunk Cookies

Ingredients

Directions

  1. Preheat oven to 350 F.

  2. Using a food processor, high powered blender, or the back of a fork, mash the sweet potato until there are no chunky and set aside

  3. In a mixing bowl, whisk together the almond flour, cinnamon, baking soda, and sea salt and set aside

  4. In a separate large bowl, mix coconut nectar, vanilla, and eggs until well combined. Add in the mashed sweet potato and continue to mix

  5. Slowly pour the almond flour mixture into the bowl with the sweet potatoes and gently mix until well incorporated

  6. Finally, fold in the chocolate chunks

  7. Line a baking sheet with parchment paper or grease with oil of choice and spoon the dough into balls and transfer to baking sheet (I used an ice cream scoop and pressed down on the baking sheet to flatten them out)

  8. Bake for 9-11 minutes until golden
