Sweet Potato Chocolate Chunk Cookies
Asking someone how they like their cookie is like asking someone how they take their coffee - you’ll always get a different answer. There is crispy, chewy, crunchy, gooey, buttery, nutty, chocolaty, crumbly, and my personal fav….served with a glass of ice cold milk =)
If I’ve learned anything in my short time on this Earth it is that it is very hard to please everyone. However, I think I’ve cracked the code - these GOOEY, CHOCOLATY, and rather HEALTHY cookies are sure to please the biggest cookie snob out there. The combination of the gooey cookie + the hot melted dark chocolate will drive ya wild!! Enjoy my friends!
Yields 24 cookies
Preheat oven to 350 F. In a mixing bow, whisk together the mashed sweet potato, almond flour, and eggs. Add in cinnamon and baking powder until thoroughly mixed. Next, stir in coconut nectar, vanilla, and sea salt. Finally, fold in chocolate chunks. Line a baking sheet with wax paper and scoop cookie dough balls onto sheet (I used an icecream scoop and kept them in their golf ball shape). Bake for 10 minutes until golden.
