Description
Thick, chewy, and buttery chocolate chunk tahini cookies. These cookies are just like your traditional chocolate chip cookie but with a hint of nutty flavor from tahini and laced with chocolate chunks that melt into puddles of chocolate. They are simply down right delectable!
Ingredients

- 2 cups almond flour
- 1/3 cup tapioca flour
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp sea salt
- 2 eggs
- 1/3 cup tahini
- 1/4 cup coconut sugar
- 1 tsp vanilla
- 2 Tbsp coconut oil (melted then cooled)
- 1/2 cup chocolate chunks
Instructions
- Preheat oven to 350 F
- In a bowl, whisk together the almond flour, tapioca flour, baking soda, baking powder, and sea salt; set aside
- In a large bowl, mix the eggs, tahini, coconut sugar, vanilla, and coconut oil until thoroughly mixed
- Fold the flour mixture into the bowl with the eggs until no flour clumps remain; mix in the chocolate chips
- Using a spoon, roll dough into golf-ball sized balls, then pat down to form a disk. Place on greased baking sheet and bake for 10 - 12 minutes until the edges turn golden brown
- Enjoy warm out of the oven or store in an air-tight container in the fridge for up to a week
