Description
Get into the fall spirit with a fresh batch of these homemade vegan baked apple fritters! Best of all, you can enjoy these super fluffy baked doughnuts without the mess of a deep fryer. They're still pillowy soft and drizzled with a maple coconut butter glaze.

For the apples
- 3 cups diced apples (approx. 3 medium apples)
- 3 Tbsp coconut oil
- 3 Tbsp coconut sugar
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp cloves
For the dough
- 1 cup Native Forest Organic Unsweetened Simple Coconut Milk
- Tablespoon apple cider vinegar
- 1 cup cassava flour
- 1/4 cup Let's Do Organic Arrowroot Starch
- 1 Tbsp baking powder
- 2 Tbsp coconut sugar
For the glaze
- 1/3 cup coconut butter, melted (sub. 1/2 cup organic powdered sugar if desired)
- 2 Tbsp maple syrup
- 1 Tbsp nut milk, if needed to thin out the glaze
Instructions
- Preheat the oven to 400F. Saute the apples in a skillet over medium-low heat with all the apple ingredients until soft. Remove from heat and let cool while you prepare the dough
- In a small bowl, whisk the Native Forest Organic Unsweetened Simple Coconut Milk and apple cider vinegar together and set aside
- In a mixing bowl or the bowl of a stand mixer, mix the cassava flour, Let's Do Organic Arrowroot Starch, baking powder, and coconut sugar. Slowly add the coconut milk mixture and continue to mix until a thick dough forms. Add the apple mixture (including any liquid) and mix a few times to incorporate
- With a large cookie scoop, scoop the dough onto a baking sheet lined with parchment paper. Bake for 12 - 14 minutes until the tops of the fritters turn golden brown
- While the fritters are baking, prepare the icing by mixing the melted coconut butter and maple syrup in a small bowl. Add 1 Tbsp nut milk if needed to thin out the mixture. Drizzle over fritters while warm and enjoy!
