Vegan Ginger Snap Cookies

With insanely crunchy edges and a soft & chewy center, these ginger snap cookies have it all. Made with molasses, ginger, and a touch of coconut sugar, they taste just like a traditional ginger snap. With only clean, wholesome ingredients, these health-ier ginger snaps make the ultimate holiday cookie!



  • 1 1/2 cup almond flour
  • 1/4 cup arrowroot starch
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp cloves
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/4 cup coconut oil (melted and cooled)
  • 1/4 cup back-strap molasses
  • 1/3 cup coconut sugar
  • 1 tsp vanilla


  1. Preheat oven to 350 F
  2. In a bowl, whisk together the almond flour, arrowroot flour, cinnamon, ginger, nutmeg, cloves, baking soda, baking powder, and sea salt; set aside
  3. In a separate large bowl, mix the coconut oil, molasses, coconut sugar, and vanilla until the coconut sugar is dissolved into the mixture
  4. Slowly fold in the flour mixture into the bowl with the molasses until no flour clumps remain
  5. Place parchment paper on top of a cookie sheet or grease with oil. Using a spoon or a small ice cream scoop, roll batter into balls, gently pat into a disk-like shape, and place onto cookie sheet
  6. Bake for 12 - 14 minutes until the edges begin to crispen up
  7. Let cool before removing from the cookie sheet
  8. Enjoy immediately or store in an airtight container for up to a week*


*Note - I have frozen a batch of these cookies as well and wanted to note that they are absolutely delicious after frozen. The spices blend together perfectly once heated up again or you can simply enjoy straight out of the freezer if you can’t wait.
