Fluffy Saffron Brown Rice
Cook the chicken in olive oil. Saute the onions and garlic in the same pan until soft.
Add tomato paste, saffron, and spices to the pan with the chicken until it is well-absorbed.
Add the chorizo and cook until warm.
Stir in rice, broth, and diced tomatoes. Cover with lid and simmer for 20 minutes.
Add in the shrimp and peas. Cook for another 5 minutes until shrimp is cooked through.
