Rich Homemade Ricotta
Warm mushrooms in a skillet with olive oil. Add ground turkey, oregano, sea salt. Brown. Pour in tomato sauce and set aside.
Place the soaked cashews in a food processor and blend. Add tofu, olive oil, almond milk, garlic, oregano, and sea salt. Mix until creamy, Add spinach and pulse.
Spoon tomato sauce into bottom of dish. Place noodles on top followed by ricotta and turkey. Repeat. Top with dairy free mozzarella and bake!
