Ingredients

step 1

Brown beef with olive oil in a skillet over medium heat. Break into smaller pieces. Add taco seasoning and cook until no pink remains. 

step 2

Add black beans, corn, diced tomatoes with green chilies, onion, and bell peppers to casserole dish. 

step 3

Mix together and sprinkle quinoa on top. Add salsa and broth and toss again. Sprinkle cheese over ingredients. 

step 4

Bake the taco casserole until cheese is melted on top. Broil after cooking to achieve a golden brown color.
