Melt the coconut cream. Stir coconut sugar, vanilla, and espresso powder. 

step 2

Pour the coconut cream mixture over the chocolate chips and stir. Chill for at least 6 hours.

step 3

Scoop ganache into balls and roll with hands. 

step 4

Dip truffle balls in melted chocolate.
