Season chicken well with spices. Heat oil in a skillet and add chicken thighs. Cook for a few minutes on each side and transfer to plate.
Add vegetables to a large bowl starting with lettuce, cabbage, green onion, and cilantro. Add remaining vegetables and cheese and toss again.
Prepare the dressing by placing all ingredients except jalapeño and cotija cheese in small bowl. Mix until smooth. Add remaining ingredients and mix.
Pour the dressing over the salad. Toss to coat. Add chicken and toppings of choice.
