Place all ingredients in a high speed blender and mix well until the mixture is running smoothly.
Scrape down the sides as needed and mix until it's slightly thick and creamy in consistency.
Pour the greek yogurt mixture into an ice cream maker and mix according to your maker's instructions.
Blend until the yogurt begins to thicken up and resembles soft serve ice cream. This took me about 15 minutes.
If you want a more traditional "ice cream" consistency, scoop the yogurt into a pan and freeze until firm.
