Crisp Apple Flavor
Sweet Maple Icing
Melt the brown sugar pecan mixture by mixing melted butter, brown sugar, flour, and pecan pieces. Place mixture into pan and press onto parchment paper.
Beat together butter and sugars until creamy. Add apple cider, egg, and vanilla. Mix well.
Gently fold in gluten free flour, backing powder, and spices. Add chopped apples to bowl and continue to fold until combined.
Pour the batter into the prepared pan on top of brown sugar pecan base. Even out the top with a spatula. Bake until cake is golden brown on top. Allow cake to cool.
Prepare the icing by mixing softened cream cheese, apple cider, and maple syrup. Add the powdered sugar and cinnamon. Thin out with milk as needed.
Pour icing over the cooled cake. Use a spatula to spread out icing. Let icing set for about 10 minutes.
Place apple slices, butter, and cinnamon in a skillet and heat over medium heat until apples are soft. Allow to cool and pile on top of cake.
