Beat the butter in the bowl until it's creamy.
Add the eggs and almond milk to the bowl and mix until well incorporated.
Add the dry ingredients and continue to mix until thick cookie dough begins to form.
Scoop the dough onto a baking sheet and bake until golden.
Prepare the cream cheese filling.
Spread the filling onto the bottom of a cookie.
Place another cookie on top to sandwich the two together
