Make the dressing by adding all ingredients to a jar. Cover with a lid, stir or shake to combine. Set aside.
Cook the farro according to the package. Chop the veggies. Drain and rinse the chickpeas and place all ingredients in a large bowl.
Pour the dressing on top and toss to combine. Sprinkle feta and arugula on top and toss again.
