Ingredients

step 1

Cut and peel pumpkins into rounded strips and place on baking sheet with pecans.

step 2

Mix olive oil, spices, and maple syrup in bowl. drizzle mixture onto pumpkin and pecans. Bake until pumpkin is fork-tender.

step 3

Prepare the rice according to instructions on package. 

step 4

Whisk together dressing ingredients until well-combined.

step 5

Massage kale in large bowl. Add dressing, diced apples, feta, and wild rice. Toss together. Add pumpkin and pecans.
