Ingredients

step 1

Cream the room temperature butter and sugar together in a stand mixer until light and creamy.

step 2

Add egg, vanilla extract, and lemon juice. Mix to incorporate. Fold in dry ingredients until almost fully incorporated.

step 3

Break up the frozen raspberries with your hands. Add them to the bowl and fold into cookie dough. Don't overmix.  Chill the dough and preheat oven.

step 4

Use a cookie scoop to scoop dough onto a prepared baking sheet. Bake in the oven until edges are set and golden.

Sprinkle with coarse sugar and enjoy!
