Ingredients

step 1

Chop up the hard boiled eggs. Slice in half and place yolks in a blender. Chop whites into large pieces.

step 2

Cook the pasta until al dente. Blend up dressing ingredients until sauce is thin and creamy.

step 3

Drain the pasta and transfer to a large bowl. Pour the sauce over the noodles and toss to coat. 

step 4

Add the avocado chunks, egg whites, and red onions. Toss to distribute. Garnish with diced green onions, paprika, and sea salt.
