Whisk together ricotta and almond milk. Use whisk or back of a fork. This mixture should be slightly thick.
In a separate bowl, whisk eggs to break up yokes.
Fold in ricotta cheese mixture, chopped peppers, onions, sea salt, and garlic powder. Mix until incorporated.
Grease muffin tin with oil and fill with egg batter leaving room. Bake until ricotta egg bites are set. Allow to cool in pan.
