The Best Gluten Free Turkey Lasagna

Ingredients

  • 3 tablespoon olive oil
  • ½ onion diced (about 1 cup)
  • 2 garlic cloves minced
  • 1 lb ground turkey
  • 2 cups Rao’s Marinara or marinara of choice
  • Gluten free lasagna noodles about 4 large sheets
  • 16 oz ricotta cheese part-skim or whole milk
  • 1 cup mozzarella cheese
  • Parmesan optional

Instructions

  • Preheat oven to 350 F. Heat the olive oil in a large skillet over medium heat with the diced onions. Cook the onions until soft and translucent.

  • Add the minced garlic and cook with the onions until soft.

  • Add the ground turkey to the skillet and cook until brown all the way through. This can take 3 - 5 minutes.

  • Add the marinara sauce to the skillet and continue to cook until simmering. Remove the skillet from the heat and set aside.

  • Spoon about ⅓ of the meat sauce into the bottom of an 8 x 8 square baking dish and spread into an even layer. Layer the lasagna noodles on top to cover the sauce and then spread half of the remaining sauce over the noodles. Spread the ricotta cheese over the meat sauce into a thick layer (it will soften up and become easier to spread as it heats up next to the sauce). Place another layer of lasagna noodles on top followed by the remaining meat sauce. Sprinkle the mozzarella cheese over top into an even layer and add the parmesan cheese, if desired, on top as well.

  • Place a piece of aluminum foil over top and bake in the oven for 45 minutes.
  • Remove the aluminum foil and bake in the oven for another 15 minutes until the cheese is melted on top.
  • Let the lasagna set for at least 20 minutes before slicing into pieces and enjoy!
