Easy Baked Goat Cheese Pasta with Sausage and Mushrooms

Spice up your weeknight dinner menu with this sausage and mushroom baked goat cheese pasta. Inspired by the viral TikTok famous baked feta pasta, it's so easy to make and comes together in under an hour. It's creamy and filling and the a dish the whole family will love!

Ingredients

  • 8 oz mushrooms sliced
  • 1 cup white onion diced
  • 9 oz sausage sliced (any kind will work, I used chicken)
  • 2 tablespoon olive oil divided
  • 1 teaspoon sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon oregano
  • ¼ teaspoon paprika
  • 8 oz goat cheese soft
  • 9 oz pasta I used chickpea
  • ½ cup pasta water
  • Scallions to garnish
  • Parsley to garnish

Instructions

  • Preheat oven to 400 F. In an 8 X 10 inch pan, add the sliced mushrooms, diced onions, and sliced sausage. Toss to mix.
  • Pour in 1 ½ tablespoon olive oil and sprinkle the sea salt, garlic powder, oregano, and paprika over top and toss to distribute.
  • Make a little hole in the center of the dish for the goat cheese log. Place the goat cheese in the center and pour the remaining ½ tablespoon of olive oil over the goat cheese. Bake the pan in the preheated oven for 20 minutes until the onions and mushrooms are soft and cooked.
  • While the goat cheese is baking, cook the pasta according to the package directions. Try to cook it al dente so the noodles are a little firmer which makes it easier to toss in the sauce. Reserve ½ cup of the pasta water before draining.
  • When the goat cheese pan is done in the oven, use the back of a spoon or a spatula to mix up the softened cheese with the sausage, mushrooms, and onions. Mix well so the goat cheese is well distributed and no clumps remain. It should be easy to mix since it’s warm.
  • Then add the cooked pasta to the pan along with the extra pasta water. Toss well in the cheese mixture to coat.
  • Sprinkle scallions and parsley leaves over top and serve.

Notes

Storing : Place some aluminum foil over the pan when you're done and store it in the fridge. You can also pour it into a separate airtight container but you will end up dirtying up a pan to heat it back up. When ready to enjoy, heat the pan up in the oven at 350 F for 10 minutes until the pastas is hot. Add a little warm water and mix it all up before serving. The pasta will keep for 5 days in the fridge.
