Vegan Mug Brownie

This vegan mug brownie is the perfect single-serving treat for when a chocolate craving hits! Made with simple ingredients, it requires little to no prep time, zero fancy equipment, and bakes in the microwave in just a minute or two. Add a scoop of ice cream and your favorite garnishes, and dig in while it’s warm!

Ingredients

  • 1 tablespoon applesauce
  • 2 tablespoon coconut sugar or brown sugar
  • ½ teaspoon vanilla
  • 2 tablespoon chocolate chips
  • 1 ½ tablespoon coconut oil melted, or any oil
  • ¼ cup flour use gluten free 1:1 or almond flour to make this gluten free
  • ½ tablespoon cocoa powder
  • ½ teaspoon baking powder
  • teaspoon sea salt

Instructions

  • In a bowl mix together the applesauce coconut sugar and vanilla until the sugar is well incorporated.
  • In a separate bowl pour the melted coconut oil over the chocolate chips and stir until the chocolate is melted.
  • Add the melted chocolate to the bowl with the applesauce and stir well.
  • Sprinkle in the flour, cocoa powder, baking powder, and salt and mix until a batter forms.
  • Pour the batter into a ramekin or a coffee mug and microwave for 60 seconds. The mug cake is done when it puffs up like a cake.
  • Allow the mug to cool down slightly before removing it from the microwave. Then top with a scoop of ice cream and any other toppings and enjoy.

Notes

Storing: Once the mug cake has cooked, you can refrigerate it covered for up to 2 days. Warm it up again in the microwave in 10-second intervals before enjoying.
