Nut-free Chocolate Granola Bars

- 2 cups dates
- 1 cup rolled oats
- ⅓ cup SunButter
- ¼ cup pumpkin seeds
- 3 tablespoon cranberries
- 1 ½ tablespoon chia seeds
- ¼ cup sunflower seeds
- 1 tablespoon sesame seeds
- ¼ cup shredded coconut
- ¼ cup mini chocolate chips plus more to drizzle if desired
If your dates are dry, soak in warm water for 5 minutes. Then, puree dates in a food processor or high-speed blender.
In a mixing bowl, add all ingredients and mix with a wooden spoon or spatula. You may want to use your hands if the mixture becomes to thick.
Press the mixture into a lined 8 x 8 baking pan and place in fridge for at least 3 hours to set.
Once set, cut into 8 bars. If desired, melt additional chocolate chips and drizzle over top of bars.
Enjoy immediately or store in an airtight container in the fridge for up to 10 days.
