Classic Rotisserie Chicken Salad

This rotisserie chicken salad is creamy, balanced, and perfect for meal prep. Made with grapes, pecans, and avocado oil mayo for an easy weekday lunch.

Ingredients
 
 

  • 1 rotisserie chicken - about 2 cups shredded chicken
  • 2 stalks celery - diced
  • ½ cup grapes - halved
  • ¼ cup onion - diced
  • ¼ cup pecans - chopped
  • ½ cup avocado oil mayo - regular mayo works too
  • ½ cup greek yogurt
  • 1 tablespoon apple cider vinegar
  • ½ tablespoon honey
  • ½ teaspoon garlic powder
  • ¼ teaspoon cumin
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  • Remove the meat from the rotisserie chicken and chop loosely into small pieces.

  • In a large bowl add the chicken, celery, grapes, onion, and pecans. Toss to combine.
    2 stalks celery, ½ cup grapes, ¼ cup onion, ¼ cup pecans
  • In the same bowl add the avocado oil mayo, greek yogurt, apple cider vinegar, honey, garlic powder, cumin, sea salt, and pepper. Toss well to coat.
    ½ cup avocado oil mayo, ½ cup greek yogurt, 1 tablespoon apple cider vinegar, ½ tablespoon honey, ½ teaspoon garlic powder, ¼ teaspoon cumin, ½ teaspoon sea salt, ¼ teaspoon black pepper
  • Enjoy immediately or store in an airtight container in the fridge for up to a week!
