There are nights when I want something comforting and flavor-packed, but I don’t want to stand over the stove for an hour and that’s exactly where this crockpot butter chicken comes in. The chicken slowly simmers in Indian-inspired spices like garam masala, ginger, turmeric, cumin, and a touch of cayenne while you go about your day. It’s finished with tomato sauce, coconut milk, and greek yogurt for a rich silky sauce. This is the kind of easy crockpot butter chicken I keep on repeat for busy weeknights!

Why I Keep Coming Back to This Crockpot Butter Chicken

I’ll cut right to the chase - the crockpot is exactly why I make this recipe time and time again. I can dump everything into one pot, let it cook low and slow all afternoon, and have dinner basically ready by sunset. Umm where do I sign?

If your house is anything like mine, with a little one tugging at your leg or another kid getting into paint at the kitchen table while your hands are covered in raw chicken, a hands-off dinner is where it’s at. I toss everything into the crockpot during nap time (or the rare 15 minutes I have to myself), let it work its magic, and finish it with tomato sauce, coconut milk, and a few spoonfuls of Greek yogurt right before dinner.

How to Make Slow Cooker Butter Chicken

Step 1 : Toss the chicken with spices, scatter the butter on top, and cook low and slow.

How to Store

This meal keeps really well in the fridge or freezer (yet another reason why I love it so much). You can easily heat it up on the stove top or in the microwave until it's warm. I like to add a splash of broth or water to loosen the sauce up a bit too.

Ingredients
 
 

  • 2 lbs chicken breast - cut into chunks
  • 1 onion - diced
  • 1 tablespoon garam masala
  • 1 tablespoon ginger
  • 2 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 2 tablespoon butter - cut into chunks
  • 1 14 oz can tomato sauce
  • ½ cup coconut milk - full fat
  • ½ cup greek yogurt

To serve

  • Rice
  • Naan

Instructions

  • In a crockpot or slow cooker, add the chunks of chicken breast, diced onion, garam masala, ginger, tumeric, cumin, cayenne pepper, sea salt, and black pepper. Toss well to distribute the spices. Scatter the chunks of butter of the chicken, place the lid on the crockpot, and slow cook on low for 5 - 6 hours or on high for 3 - 4 hours.
    2 lbs chicken breast, 1 onion, 1 tablespoon garam masala, 1 tablespoon ginger, 2 teaspoon turmeric, 1 teaspoon cumin, 1 teaspoon cayenne pepper, ½ teaspoon sea salt, ¼ teaspoon black pepper, 2 tablespoon butter
  • The chicken should be tender and cooked all the way through. Turn the slow cooker to a “keep warm” setting and add the tomato sauce and coconut milk. Mix well to distribute. Allow the slow cooker to keep warm for 10 - 15 minutes, this will thicken up the sauce. Let the greek yogurt sit out on the counter during this time to come to room temperate.
    1 14 oz can tomato sauce, ½ cup coconut milk
  • Turn the slow cooker off and add the greek yogurt. Stir to combine with the sauce and chicken.
    ½ cup greek yogurt
  • Serve the butter chicken with rice and naan, if desired, and enjoy!
