Crockpot Honey Garlic Chicken & Rice
This crockpot honey garlic chicken and rice is like fried rice that makes itself! Chicken cooks low and slow in a sticky and sweet honey garlic sauce. When it's dinner time, all you need is 15 minutes to throw in some frozen mixed veggies and rice and it's done! Top with yum yum sauce and green onions and dig in.

ICYMI, I'm celebrating Crock-tober and sharing loads of dump and go crockpot recipes all October long. So far you all have LOVED them, especially my chicken pot pie gnocchi. That tells me we're all looking for the same thing - easy, no-fuss dinners you hardly have to think about.

This honey garlic chicken & rice is exactly that! The chicken cooks while you're out, and when you walk in the door from all the after-school activities, you toss in some frozen veggies (whatever you have in the freezer), microwave some rice, and dinner is done. Highly recommend the yum yum sauce too. It's a must!

Ingredients & Notes
- Chicken breast - It falls a part in the crockpot after a few hours and soaks up the sause beautifully. Use chicken thigh if desired.
- Honey - This adds the sweetness to the sauce.
- Coconut aminos - For some umami flavor. You can also use soy sauce or tamari.
- Sesame oil - Adds a savory almost nutty flavor to the dish. You can use avocado or olive oil in a pinch.
- Garlic - Fresh is best!! You need 6 total cloves for this dish.
- Ginger - Fresh is also best but if you only have ground ginger, use ½ teaspoon.
- Chili crunch oil - Optional. See my tip below if you're feeding kids.
- Rice - Needs to be cooked already (we're taking all the shortcuts). I used microwaveable brown rice pouches.
- Frozen veggies - I used a blend of peas, carrots, green beans, and corn. Any kind of mixed veggie works!
- Yum yum sauce - Store-bought works (I like the Primal Kitchen brand). For homemade, I use the sauce from my air fryer teriyaki salmon bites bowls.

Ansley's Tips
- Skip the chili crunch if you plan on serving to your kids. I left it out of the pot for my kids and they ate it. My husband added it to his own bowl.
- The rice gets stirred in at the very end, so make sure it's cooked rice.
- Taste before you serve. I add a dash of coconut aminos to my bowl. The yum yum sauce adds a lot of flavor too!
How to Store Leftovers
This makes 6 servings, so plan on having some left. It keeps in the fridge for up to 4 days. Heat it up in the microwave or on the stovetop until warm.

Crockpot Honey Garlic Chicken & Rice
Ingredients
- 3 tablespoon honey
- 3 tablespoon coconut aminos - or soy sauce
- 1 tablespoon sesame oil
- 6 garlic cloves - minced
- 1 teaspoon fresh ginger - grated (or ½ teaspoon ground ginger)
- 1 tablespoon chili crunch oil - optional
- 2 tablespoon arrowroot starch - or corn starch
- 1 ½ lb chicken breasts - or thighs
- 1 onion - diced
- 1 cup frozen mixed vegetables - I used peas, carrots, corn, and green beans
- 4 cups cooked rice - warm (I used microwaveable brown rice)
To serve
- Green onions - sliced
- Sesame seeds
- Yum yum sauce - homemade or store-bought
Instructions
- Add the honey, coconut aminos, sesame oil, garlic, ginger, chili crunch oil (if using), and arrowroot starch to a crockpot and whisk to combine.3 Tbsp honey, 3 Tbsp coconut aminos, 1 Tbsp sesame oil, 6 garlic cloves, 1 tsp fresh ginger, 1 Tbsp chili crunch oil, 2 Tbsp arrowroot starch
- Nestle the onion and chicken breasts into the sauce. Cover and cook on LOW for 4 - 6 hours or HIGH for 2 - 3 hours, until the chicken pulls apart easily.1 ½ lb chicken breasts, 1 onion
- Pull the chicken into smaller pieces. Add the frozen vegetables and mix well. Cover and cook on LOW for 15 - 20 minutes.1 cup frozen mixed vegetables
- Add the cooked rice and mix well until it absorbs the extra sauce.4 cups cooked rice
