Ingredients
 
 

  • 2 lbs chicken breast - cut into 1 inch cubes
  • 1 tablespoon arrowroot starch - or cornstarch
  • 2 teaspoon Italian seasonings
  • 1 teaspoon paprika
  • 1 teaspoon sea salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes - adjust depending on heat preference
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 1 white onion - diced
  • 2 garlic cloves - minced
  • ½ cup sundried tomatoes - loosely chopped
  • 1 tablespoon oil from sundried tomato jar
  • 4 cups chicken broth - low sodium
  • 2 cup orzo
  • ½ cup kale - loosely chopped, or spinach
  • ½ cup coconut milk - full fat
  • ¼ cup parmesan cheese - optional

Instructions

  • Add the chicken breast to the crock pot and sprinkle the arrowroot starch, Italian seasonings, paprika, sea salt, black pepper, and red pepper flakes over top. Gently toss to coat the chicken breast with the seasonings. Then add the olive oil, tomato paste, white onion, garlic cloves, sundried tomatoes, oil from sundried tomato jar, and chicken broth. Mix to combine. Place the lid on the crockpot and cook for 3 - 4 hours on high or 5 - 6 hours on low.
    2 lbs chicken breast, 1 tablespoon arrowroot starch, 2 teaspoon Italian seasonings, 1 teaspoon paprika, 1 teaspoon sea salt, ¼ teaspoon black pepper, ¼ teaspoon red pepper flakes, 1 tablespoon olive oil, 1 tablespoon tomato paste, 1 white onion, 2 garlic cloves, ½ cup sundried tomatoes, 1 tablespoon oil from sundried tomato jar, 4 cups chicken broth
  • The chicken should be tender enough to cut with a fork at this point. If there are any large pieces of chicken, break them into smaller pieces with a spatula. Then add the orzo, kale, coconut milk, and parmesan cheese, if using. Mix well to combine then place the lid back on and allow the orzo to cook for another 30 - 45 minutes until the orzo is tender.
    2 cup orzo, ½ cup kale, ½ cup coconut milk, ¼ cup parmesan cheese
  • Serve the dish warm with an extra sprinkle of parmesan cheese, if desired, and enjoy!
