Crockpot Trader Joe's Chicken Shawarma Bowls
This is the easiest dinner on the blog! A package of Trader Joe's chicken shawarma thighs goes into the crockpot, untouched, for a couple of hours. Shred it, then build bowls with microwave rice, sliced cucumber, hummus, and tzatziki. Two minutes to start it, five to plate it!

Yes, Trader Joe's shawarma works in a slow cooker
I had 15 minutes between bus stop pickup and driving the kids to afterschool activities, and we weren't going to be home until close to 6. I didn't want to start dinner at 6...I wanted it done at 6. So I opened the shawarma package, dumped the whole thing into the crockpot on low, and left (and hoped for the best).

The package says to cook in an oven or grill but marinaded thighs are exactly what a slow cooker is built for! When we got home later, I shredded it with two forks without any resistance and assembled delicious rice bowls in a matter of minutes. Dinner on easy mode!

Crockpot Trader Joe's Chicken Shawarma Bowls
Equipment
- crockpot
Ingredients
- 1 package Trader Joe's Shawarma Chicken Thighs - about 1.5 lb
- 2 bags microwaveable rice - jasmine or brown
- 1 cucumber - thinly sliced
- ¼ red onion - diced
- ½ cup hummus
- ½ cup tzatziki
- Optional: cherry tomatoes, red onion, feta, pita
Instructions
- Add the chicken thighs and all the marinade from the package to the slow cooker. Cover and cook on low for 4 - 5 hours or high for 2 - 3 hours, until the chicken shreds easily.1 package Trader Joe's Shawarma Chicken Thighs
- Shred the chicken with two forks directly in the slow cooker and stir it into the juices.
- Microwave the rice according to the package.2 bags microwaveable rice
- Slice the cucumber and dice the red onion and gently toss together.1 cucumber, ¼ red onion
- Divide rice between 4 bowls. Top with shredded chicken, cucumber and red onion, a spoonful of hummus, and a spoonful of tzatziki.½ cup hummus, ½ cup tzatziki
