Step 1 : melt the coconut cream

First, heat the coconut cream on the stove over medium heat until it begins to bubble. Then add the coconut sugar, vanilla extract, and espresso powder and stir to incorporate.

Step 2 : pour over the chocolate

Pour the warm coconut cream mixture over the chocolate chips. Using a rubber spatula, stir the mixture to melt the chocolate chips. Let set in the fridge overnight.

Step 3 : roll the ganache into balls

Once set, take a small cookie scoop and scoop the chocolate ganache into balls.

Step 4 : dip in melted chocolate

Dip each chocolate ball in melted chocolate and place on a baking sheet to set in the fridge.
