Made with Real Bananas
Whisk coconut cream and almond milk together in a saucepan. Heat over medium until simmering.
In a separate bowl, mix spoonfuls of the warm milk with cornstarch. Pour the mixture into the pot and whisk well into the remainder of the milk. Whisk until it thickens.
Remove the pot from the stove, Whisk egg yolks in a separate bowl. Add egg yolks and vanilla back into the pot and stir well.
Pour the pudding into a large bowl and cover with plastic wrap. Chill for at least 3 hours or overnight until pudding has set.
Assemble by adding sliced bananas to bottom of glass. Sprinkle crushed graham crackers over the top followed by banana pudding. Repeat until you reach the top.
