Soft and Fluffy
Mix together wet ingredients in a bowl. Add eggs, almond milk, greek yogurt, honey, vanilla, and lemon juice.
Heat a skillet or griddle over medium heat with melted butter or coconut oil. Measure 1 cup of batter to make large pancakes. Cook until bubbles appear and flip.
Make honey butter by placing softened butter with honey and mix well with a spoon. Stir well to incorporate.
