Healthy Sweet Potato Waffles

These Sweet Potato Waffles are deliciously tasty and nutrient packed.  Make them on a lazy weekend morning or store them in the freezer for a waffle any day of the week!

Ingredients

For the Waffle

  • 1 cup sweet potato mashed, approx. 1 potato
  • 2 eggs
  • 1 cup oat flour
  • 1 teaspoon baking soda
  • ¼ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • Oil of choice to grease waffle iron

Toppings

  • Greek Yogurt
  • Berries blueberries, strawberries, backberries, etc.
  • Nuts pecans, almonds, walnuts, etc.
  • Maple syrup or honey

Instructions

  • In a food processor or high speed blender, mix the mashed sweet potato and eggs until creamy.
    1 cup sweet potato, 2 eggs
  • Add oat flour, baking soda, cinnamon, and sea salt and continue to mix until full incorporated.

  • Heat waffle iron on medium heat. Grease waffle iron with oil of choice and pour ⅓ of the batter, careful not to fill the iron to the edges or it will overflow when you close the lid.

  • Cook waffle for 3-4 minutes in the waffle iron.
  • Serve while hot with optional toppings and enjoy!
