In a food processor or high speed blender, mix the mashed sweet potato and eggs until creamy.
1 cup sweet potato, 2 eggs
Add oat flour, baking soda, cinnamon, and sea salt and continue to mix until full incorporated.

Heat waffle iron on medium heat. Grease waffle iron with oil of choice and pour ⅓ of the batter, careful not to fill the iron to the edges or it will overflow when you close the lid.

Cook waffle for 3-4 minutes in the waffle iron.
Serve while hot with optional toppings and enjoy!
