Ingredients

  • 3 bananas
  • 2 eggs
  • 1 cup almond milk or any type of milk
  • cup almond butter
  • cup maple syrup
  • 1 tablespoon vanilla
  • 2 cups rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cloves
  • ¼ teaspoon sea salt
  • ½ cup chocolate chips

Instructions

  • Mash the bananas. Preheat oven to 350 F. In a large bowl, mash the bananas, leaving a few small clumps.

  • Prepare the batter. Add the remaining ingredients to the bowl and whisk to combine.
    2 eggs, 1 cup almond milk, ⅓ cup almond butter, ⅓ cup maple syrup, 1 tablespoon vanilla, 2 cups rolled oats, 1 teaspoon baking powder, 1 teaspoon cinnamon, ¼ teaspoon nutmeg, ¼ teaspoon cloves, ¼ teaspoon sea salt, ½ cup chocolate chips
  • Bake. Spray a 9 x 13 inch baking dish with cooking spray then pour in the batter. I like to sprinkle a few chocolate chips or banana slices on top. Then bake in the preheated oven for 35 - 40 minutes until the top of the baked oats are golden brown.

Notes

Storing : Allow the baked oats to cool, then store the slices in an airtight container. They will keep for up to a week in the fridge.
