Season chicken thighs with salt and pepper. Cook in a skillet with sesame oil until cooked through. Transfer to a plate.

Meanwhile, cook udon noodles in a pot of water. Reserve ¼ cup of the noodle water before draining.
8 oz dry udon noodles or 12 oz fresh
In the same skillet, sauté garlic in 1 tablespoon sesame oil until toasted. Add peanut butter, soy sauce, maple syrup, rice vinegar, and sriracha. Whisk to combine.

Add the noodles to the skillet with the reserved noodle water and toss to coat.

Chop the chicken and add it back to the skillet with the edamame and bell pepper. Toss again.
