Easy Peanut Noodles with Chicken

Easy peanut noodles with seared chicken, edamame, and red bell pepper in a garlicky, pad-thai-style peanut sauce. One skillet, one pot, 30 minutes, dairy-free, and gluten-free. Mild enough for kids!

Ingredients

  • 2 lb boneless skinless chicken thighs
  • Salt and pepper
  • 1 tablespoon sesame oil for the chicken
  • 1 tablespoon sesame oil for the sauce
  • 2 cloves garlic minced
  • 3 tablespoon peanut butter
  • 2 tablespoon soy sauce or coconut aminos
  • 1 tablespoon maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha
  • 8 oz dry udon noodles or 12 oz fresh Lotus Foods brown rice udon for gluten-free
  • ¼ cup reserved noodle water
  • 1 cup shelled edamame
  • ½ red bell pepper diced
  • Green onions and sesame seeds for topping

Instructions

  • Season chicken thighs with salt and pepper. Cook in a skillet with sesame oil until cooked through. Transfer to a plate.

  • Meanwhile, cook udon noodles in a pot of water. Reserve ¼ cup of the noodle water before draining.

  • In the same skillet, sauté garlic in 1 tablespoon sesame oil until toasted. Add peanut butter, soy sauce, maple syrup, rice vinegar, and sriracha. Whisk to combine.

  • Add the noodles to the skillet with the reserved noodle water and toss to coat.

  • Chop the chicken and add it back to the skillet with the edamame and bell pepper. Toss again.

  • Top with green onions and sesame seeds and serve.
