For the Waffle
- 1 cup sweet potato mashed, approx. 1 potato
- 2 eggs
- 1 cup oat flour
- 1 teaspoon baking soda
- ¼ teaspoon cinnamon
- ¼ teaspoon sea salt
- Oil of choice to grease waffle iron
Toppings
- Greek Yogurt
- Berries blueberries, strawberries, backberries, etc.
- Nuts pecans, almonds, walnuts, etc.
- Maple syrup or honey
Get Recipe Ingredients
In a food processor or high speed blender, mix the mashed sweet potato and eggs until creamy.
1 cup sweet potato, 2 eggs
Add oat flour, baking soda, cinnamon, and sea salt and continue to mix until full incorporated.
1 cup oat flour, 1 tsp baking soda, ¼ tsp cinnamon, ¼ tsp sea salt Heat waffle iron on medium heat. Grease waffle iron with oil of choice and pour ⅓ of the batter, careful not to fill the iron to the edges or it will overflow when you close the lid.
Cook waffle for 3-4 minutes in the waffle iron.
Serve while hot with optional toppings and enjoy!
