This marinated feta is creamy, tangy, herby magic — and it could not be easier to make. Just pop it in a jar, let it soak up all the good stuff, and prepare for snack-time greatness.
Prepare the feta. Pat the block of feta dry with a paper towel (this helps the cheese to absorb the oil and herbs better). Slice it into cubes. You can make these small or large (about 1 inch) just make sure they fit in your container.

Make the dressing. In a jar mix together the remaining ingredients until well combined.
½ cup olive oil, 2 lemons, ½ shallot, 3 cloves garlic, ½ tablespoon honey, 1 tablespoon thyme, ¼ teaspoon Italian seasoning, ¼ teaspoon red pepper flakes, ¼ teaspoon sea salt, ⅛ teaspoon black pepper
Assemble. Place the feta cubes in a jar and pour the dressing over top. Close the lid tight and give the jar a few turns to distribute the liquid. Place the jar in the fridge and allow the feta to marinate for at least 8 hours. The longer the feta marinates the stronger the flavor!

Storing : The feta will keep for up to 3 weeks when stored in an airtight container in the fridge.
