This chicken couscous soup recipe is one of those cozy meals I make when I want something nourishing but still comforting. The chicken cooks low and slow in the crockpot with carrots, celery, onions, lemon, and fresh herbs until everything is tender and flavorful. Right at the end, I stir in couscous, extra broth, and greek yogurt for a lightly creamy finish. It’s a healthy chicken couscous soup that feels warm and effortless!

When the temperatures start to drop and the sky turns a constant shade of gray, I find myself craving meals that feel like a warm hug. That’s exactly where this chicken couscous soup came from. It has the same nourishing feel as classic chicken soup, but the fluffy little pearls of couscous make it more filling and honestly, more fun to eat.

It's made in the crockpot (my favorite little kitchen helper) which does all the heavy lifting. I throw everything into the pot in the afternoon and dinner is ready by sunset - the best feeling!

How to Make a Crockpot Couscous Chicken Soup

Step 1 : Add all ingredients except the couscous and yogurt to a crockpot and cook.

Chicken Couscous Soup

This chicken couscous soup is made with tender chicken, vegetables, lemon, and herbs, then finished with fluffy couscous and creamy greek yogurt.

Ingredients
  

  • 3 carrots - cut into half moons
  • 3 celery stalks - thinly sliced
  • 1 white onion - sliced
  • 3 garlic cloves - minced
  • 1 ½ lb chicken breasts - cut into large chunks
  • 1 lemon - juiced
  • 1 tablespoon ginger - minced
  • 2 teaspoon oregano
  • ½ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 cup couscous
  • ½ cup greek yogurt
  • cup parmesan cheese - grated

Instructions

  • In a slow cooker, add the carrots, celery, white onion, garlic, chicken, lemon juice, ginger, oregano, sea salt, and black pepper. Cook on low for 5 - 6 hours or high for 3 - 4 hours until chicken is tender.
    3 carrots, 3 celery stalks, 1 white onion, 3 garlic cloves, 1 ½ lb chicken breasts, 1 lemon, 1 tablespoon ginger, 2 teaspoon oregano, ½ teaspoon sea salt, ¼ teaspoon black pepper
  • Once the chicken is tender, add the couscous to the slow cooker and cook on low for 30 minutes until the couscous is soft. Let the greek yogurt sit at room temperature during this time to take the chill off.
    1 cup couscous
  • Fold in the greek yogurt and parmesan cheese until well combined.
    ½ cup greek yogurt, ⅓ cup parmesan cheese
  • Serve in individual bowls, garnish with more parmesan cheese, if desired, and enjoy!
