- Broth - I used chicken broth, but any type will work. Use reduced-sodium to decrease the amount of salt in the dish.
- Chicken - I recommend using boneless, skinless chicken thighs as they’re juicier and have more flavor. However, chicken breasts can be used, if preferred.
- Seasonings - Thyme, oregano, paprika, black pepper, and parsley add the perfect amount of savoriness with just a small hint of heat.
How to make Chicken Soup with Chicken Thighs
This is an overview with step-by-step photos. Full ingredients & instructions are in the recipe card below.
Step 1: Sauté the onion. Heat the olive oil in a soup pot or Dutch oven over medium heat. Once it begins to shimmer, add the onion, and stir until soft.
Step 2: Add the aromatics. Place the garlic, ginger, and lemon juice in the pot, and stir to incorporate.
Step 3: Add the remaining ingredients. Stir in the carrots, celery, chicken broth, chicken thigh, and seasonings. Then, increase the heat to medium-high, and allow the soup to simmer until the chicken is cooked through.
Step 4: Shred the meat. Remove the cooked chicken thighs from the pot, and use two forks to shred them into bite-sized pieces. Transfer the pulled chicken back to the pot, and stir to incorporate.
Step 5: Enjoy! Divide the healthy soup with chicken into bowls, and top with chopped parsley. Serve warm.
Traditional Chicken and Vegetable Soup Variations
- Vegetables - you can add really any vegetable you have lying around. Peas, corn, kale, etc. Simple add it in with the other vegetables in the pot and cook according to directions.
- Beans - white beans, navy beans, cannellini beans, and garbanzo beans are all great additions to soup and will up the protein too!
- Pasta - add 1 cup dry pasta of choice to the pot along with the broth and simmer until the pasta is al dente. You will probably want to add another ½ - 1 cup of broth as the pasta will soak up some to cook.
- Rice - Add cooked rice (I prefer wild rice) to the soup when adding the pulled chicken back to the pot. Stir well and serve!

Ingredients
- 1 tablespoon olive oil
- 1 yellow onion - diced
- 5 cloves garlic - minced
- 1 tablespoon ginger - freshly grated
- 3 lemons - juiced
- 4 carrots - thinly sliced
- 4 stalks celery - sliced
- 6 cups low sodium chicken broth
- 1 ½ lb chicken thigh
- 2 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon paprika
- ½ teaspoon black pepper
- Parsley - to top
Instructions
- Heat the olive oil in a soup pot or dutch oven over medium heat. Once it begins to shimmer, add the diced yellow onion and stir until soft.1 tablespoon olive oil, 1 yellow onion
- Add the minced garlic, ginger, and lemon juice to the pot and stir to incorporate.5 cloves garlic, 1 tablespoon ginger, 3 lemons
- Add the carrots and celery to the pot along with the chicken broth, chicken thigh, thyme, oregano, paprika, and black pepper. The broth should cover the chicken thighs completely. Increase the heat to medium-high and allow the soup to simmer or 15 - 20 minutes until the chicken is cooked through.4 carrots, 4 stalks celery, 6 cups low sodium chicken broth, 1 ½ lb chicken thigh, 2 teaspoon thyme, 1 teaspoon oregano, 1 teaspoon paprika, ½ teaspoon black pepper
- Fish out the chicken thighs from the pot and place them on a cutting board and pull the meat with two forks into bite sized pieces. Add the pulled chicken back to the pot and stir well to incorporate.
- Serve the soup warm with finely chopped parsley and enjoy!Parsley
