Chicken Soup Healthy ingredients

Chicken soup ingredients on a baking pan with ingredients labeled.
  • Aromatics - Yellow onion, fresh garlic, and freshly grated ginger add a savory flavor with a hint of tang.
  • Lemon - This adds a bright, refreshing taste. Freshly squeezed is best!
  • Veggies - Carrots and celery add extra texture, flavor, and nutrients.
  • Broth - I used chicken broth, but any type will work. Use reduced-sodium to decrease the amount of salt in the dish.
  • Chicken - I recommend using boneless, skinless chicken thighs as they’re juicier and have more flavor. However, chicken breasts can be used, if preferred.
  • Seasonings - Thyme, oregano, paprika, black pepper, and parsley add the perfect amount of savoriness with just a small hint of heat.

This is an overview with step-by-step photos. Full ingredients & instructions are in the recipe card below.

Step 1: Sauté the onion. Heat the olive oil in a soup pot or Dutch oven over medium heat. Once it begins to shimmer, add the onion, and stir until soft.

Step 2: Add the aromatics. Place the garlic, ginger, and lemon juice in the pot, and stir to incorporate.

Step 3: Add the remaining ingredients. Stir in the carrots, celery, chicken broth, chicken thigh, and seasonings. Then, increase the heat to medium-high, and allow the soup to simmer until the chicken is cooked through.

Traditional Chicken and Vegetable Soup Variations

  • Vegetables - you can add really any vegetable you have lying around. Peas, corn, kale, etc. Simple add it in with the other vegetables in the pot and cook according to directions.
  • Beans - white beans, navy beans, cannellini beans, and garbanzo beans are all great additions to soup and will up the protein too!
  • Pasta - add 1 cup dry pasta of choice to the pot along with the broth and simmer until the pasta is al dente. You will probably want to add another ½ - 1 cup of broth as the pasta will soak up some to cook.
  • Rice - Add cooked rice (I prefer wild rice) to the soup when adding the pulled chicken back to the pot. Stir well and serve!
