Crockpot Cheeseburger Pasta

This crockpot cheeseburger pasta tastes like the boxed hamburger helper you grew up on, minus the heavy cream, cream cheese, and cream-of-something soup. Ground beef simmers all afternoon with tomatoes, onion, ketchup, and Dijon. Then pasta and cheese go straight into the crockpot for the last few minutes. There’s no extra pot and no boiling water.

My kids' new favorite meal

Crock-tober started because our weeknights got busy. Between school and after-school activities, I didn’t want to walk in at 6:30 with nothing cooked. This one fits that perfectly! All you need is ten minutes to brown the beef, and the crockpot does the rest.

A woman with long red hair, wearing a brown sweater and jeans, smiles while standing in a modern kitchen beside a counter with fresh lettuce and hibachi steak bowls. Marble backsplash and gold kitchen accents are visible in the background.

My kids have been eating their way through Crock-tober too and this one has been their favorite (go figure!). It's like a full loaded mac & cheese situation with all the goods. Caramelized beef, pasta, and cheese! This one will be in our weeknight rotation for sure.

A person sits cross-legged in a meditation pose with their hands resting on their knees, peacefully imagining delicious hibachi steak bowls. The simple black outline contrasts against a white background.

If you need dinner in 30 minutes instead of four hours, my stovetop homemade hamburger helper is the same idea in one skillet. If you want the cheeseburger flavor without the pasta, try my loaded burger bowl. And if you’re cooking through Crock-tober with me, the shortcut crockpot birria tacos are the next beef recipe to make.

Ingredients & Notes

  • Ground beef - I use 90% lean and brown it with a little salt before it goes into the crockpot.
  • Ketchup + Dijon mustard - This is the “cheeseburger” part.
  • Diced tomatoes - I love using fire roasted for more flavor.
  • Onion + garlic: - These go in raw and soften over the long cook.
  • Beef broth - Use low-sodium so you can adjust the salt levels yourself.
  • Elbow pasta - Gluten-free or regular both work.
  • Milk of choice + cheddar - These make it creamy. Go richer on either if you want.
  • Green onions - Optional, but they add some color!
